I only enjoy this dish two to three times a year. There is only one person in my family that has "mastered" the art of making this dish correctly, and deliciously. Corn Casserole became one of my favorite homemade dishes when I was just a little girl. My grandmother makes this dish for my family every Thanksgiving and Christmas. In my opinion its the best part of the holiday festivities. Although this dish is quite simple to make, the love and time that my grandmother puts into here famous recipe gives it a form of elegance,. Her recipe to me is that one of a kind cuisine that you get at an upscale restaurant in New York, or a famous bistro in Italy. She puts her all into this dish because, she knows that her family loves the dish, and that is one thing that we all look forward to when we all gather on Christmas and Thanksgiving afternoon. It doesn't take much time to make this dish. To be honest I do not even think its some famous family recipe. All I know is that it is delicious, and I absolutely love the dish.
I recently researched the origins of this delicious dish and found some interesting facts. To my understanding corn casserole is know as "Corn Pudding", over the years we as southerners have jazzed it up a little. I found all types of ways that people make this dish, after all I thought there was only one way to make it. Some people add a form of meat like bacon or ham. I personally wouldn't enjoy it with meat. One interesting thing that I did discover is that people add a bread forming ingredient or crust; such as Jiffy Mix.
Corn Casserole, or Corn Pudding, whatever you may call it, is just a simple southern dish. Some may even think of it as comfort food. I know I truly feel the comforts of being home when I eat this dish. Since I am away at college, The only time I go home is on Thanksgiving and Christmas Break. Just in time to enjoy some of my "Grammy's" scrumptious Corn Casserole!
